 | Any vegetables of choice, pick ones that go together well, zucchini or
yellow squash with tomatoes (roma), bell peppers (red, yellow or green),
mushrooms, garlic and Italian seasoning. Rinse all veggies well. Put them into
dish in order given.
 | Cut peppers into fourth sections after removing stem, seeds. |
 | Cut squash lengthwise, then into eight pieces of equal size, after
cutting off stem and bloom ends. |
 | Cut tomatoes into halves after removing core end. |
 | Cut large mushrooms in half, small ones use whole. |
 | Peel a large garlic clove, press or finely chop over all the veggies in
dish. |
 | Generously sprinkle with Italian seasoning, salt and pepper. |
 | Cover, microwave until tender and done. |
 | Mix in some butter and enjoy. |
We eat this several times a week with just about everything, its colorful
and good for you. It looks like a lot but it goes quickly. With the
large chunks even if someone does NOT like all of it, they can easily pick out
what they do like.
Variations: Onions, Greens, thinly sliced carrots, broccoli,
cauliflower, fresh green beans, peas, fresh corn removed from cob, what ever
is in season.
Melt cheese over the top when done makes a special veggie dish
This can be put into heavy aluminum foil and put on a grill for a fast,
simple veggies with BBQ meal.
